This is super quick and easy to make. Iron is hard for vegetarians to absorb, so by adding citrus, it is much easier to absorb the iron from the spinach.

Citrus Salad

Prep Time: 19 , Cook Time: 2

PRINT
    Oranges
    Mandarines
    Grapefruit
    Walnuts
    Spinach
    Haloumi
    Tahini

DIRECTIONS

Cut the haloumi into slices and cook for a minute each side, just to get some colour.

Layer the spinach, sliced oranges, grapefruit, mandarines and haloumi on the plates.

Sprinkle over some walnuts and top with haloumi.

If you feel like a little dressing, put a small amount of tahini on the side.

Delicious!
